Introduction

For Pasta lovers - minus the pasta! For Pasta lovers - minus the pasta!
Number of Servings: 4

Ingredients

    1 lb. ground turkey
    Marinara Sauce (I like Amy's)
    garlic
    onion
    2 baked potatoes
    Oregano
    Italian Seasoning

Directions

Saute chopped onion and garlic in a large saute pan with a little non-stick spray, until wilted and tender . Reserve on a plate. In the same pan: Brown ground turkey and drain off any liquids and fat. Combine onion/garlic mixture and cooked turkey and add sauce and herbs. Let simmer at least 30 minutes- or longer. Bake potatoes for 40 minutes at 400 degrees or microwave on high for 8 minutes until fork tender. Split two potatoes to make 4 servings. Spoon sauce over potatoes and serve. My daughter and I love pasta but it has a tendency to stick to our thighs and hips so we now enjoy "Spatato" instead! You can omit the meat and use a ratatouille recipe for a Veggie version. Delicious! Enjoy!
