Tortilla Soup

Ingredients

1 T Olive oil
.5 cup chopped onion (or 3 green ones chopped)
1 package taco seasoning
1 can green chiles (chopped)
1 can (16 ounces) petite diced tomatoes
6 cups chicken broth
1-2 cups cooked, chopped chicken breast
1 bag (about 10 ounces) frozen corn
.75 cup Minute Rice
Directions
Saute onion in olive oil. Add taco seasoning and chiles. Add chicken broth and cook for about 20 minutes. Add chopped chicken, corn and rice. Cook 5 minutes more. If desired, add chopped cilantro at end. Top with cheese and serve with tortilla chips.
