Introduction

Vegetarian Spinach Quiche. Substitute the cheese with a vegan alternative to make a complete vegan meal. Make without crust for low carb alternative. Vegetarian Spinach Quiche. Substitute the cheese with a vegan alternative to make a complete vegan meal. Make without crust for low carb alternative.
Number of Servings: 8

Ingredients

    14 oz Tofu, Firm
    6 oz Cheddar Cheese, 6 oz (remove)
    2 - 10oz Spinach, frozen
    2 tbsp Soy Sauce
    1 medium Onions
    3 tsp minced Garlic
    1 Frozen Pie crust
    2 tbsp Olive Oil
    2 tsp Black Pepper

Directions

Saute onion and garlic in olive oil. Cook and drain frozen spinach according to package directions. Blend tofu and soy sauce in blender. Combine all ingredients and 4 ounce of cheese. Spread evenly into frozen premade pie crust. Bake for 45 minutes. Top with remaining cheese. Bake an additional 15 minutes.

Serving Size: Makes 8 slices
