Mexican Vegitable Soup

Number of Servings: 12

Ingredients

    2 cups cut green beans
    3 cloves minced garlic
    2 small zucchini diced
    1 cup tomatillo's diced
    1 jalapeno finely chopped (optional)
    14 oz can Rotel tomato's (I use mild)
    1 oz green chili pepper
    1 medium onion diced
    1 medium bell pepper diced
    1/2 tsp cumin
    1 tsp oregano
    6 cups vegitable broth
    Puree then add to above:
    1/2 cup roasted pepper
    1 Tbsp chipotle pepper in adobo sauce

Directions

Place the vegitables spices and broth in lg. stock pot. bring to a boil. reduce heat and simmer for 10 minutes. stir in lime juice, salt and cilantro.
Makes 12 -1 cup servings
