Crock Pot Apple Pie Filling

Fantastic in oatmeal or on its own with almond milk. Fantastic in oatmeal or on its own with almond milk.

    7 cooking apples, peeled, cored and sliced thin
    3 tbsp honey
    1 tbsp lemon juice
    1 tsp cinnamon
    2 tbsp coconut oil


Combine apples, honey, lemon juice and cinnamon in a crock pot. Dot with coconut oil. Cook on high for 2 1/2 to 3 hours (until apples are tender), stirring occasionally.

Remove apples to a bowl. Transfer liquid to a saucepan and simmer on medium heat until reduced about 2/3, then pour over apples.

Serving Size: Makes 6 servings
