4 large potatoes 1 large white onion 1 can diced tomatoes 1 container (frozen) green chile peppers 1/2 cup of oil 1.5 lbs of grilled steak or pork loin
Peel & dice the potatoes, and boil them. While the potatoes are cooking, sautee the onion, tomatoes and chile in the oil with garlic and salt to taste- add the flour as well to thicken the mixture. Dice the meat, and add it to the vegetable mixture. When the potatoes are fork tender, drain and add to the veggie/meat mixture. Add 2-3 cups of water and simmer for 20-30 minutes.
