Matzo balls- 2 small

Introduction

Mix all ingredients. Roll into golf sized balls and drop into chicken soup. Boil for 45 min. to an hour. Mix all ingredients. Roll into golf sized balls and drop into chicken soup. Boil for 45 min. to an hour.

Ingredients

    6 cups Matzo meal
    1.5 cup. Olive oil
    5.5 c. simply Egg Whites (about 21 egg equiv)
    1.5 c. chicken broth
    1 large onion diced
    1/4 c. salt
    Pepper to taste

Directions

1. Cook onions in oil
2. Mix all ingredients and let sit while a pot of chicken soup begins to boil.
3. Drop golf sized balls of soft dough into soup and cook for an hour.

Serving Size: Makes 72 small-- or 36 servings of 2 small matzo balls
