Whole wheat vegetable lasagna

Number of Servings: 12

Ingredients

    1 pkg whole wheat lasagna noodles
    1 med, egglpant, chopped or shredded
    1 sm. yellow squash, chopped or shredded
    1 sm. zuchinni squash, chopped or shredded
    1 c spinach
    1 med onion, chopped
    1 bottle of Spaghetti sauce (1 lb 9.5 oz)
    1/3 c parsley
    2 c ricotta cheese
    2 c cottage cheese
    1 c cheese blend

Directions

Chop veggies. Mix cottage chees and garlic. Layer sauce, lasagna noodles, sauce, veggies, cheese in that order 2-3 times in baking pan. Layer sauce, noodles, sauce for top. Bake at 350 covered in foil for 40 mins. Add layer of cheese and cook 5-10 minutes more until cheese is melted. Let stand 10 mins. before serving.
