Rumbamel's Veggie Cabbage Soup

Introduction

I made some home made veggie broth and had leftover veggies. We also had some cabbage for St. Patty's day so why not make a great healthy soup?! I made some home made veggie broth and had leftover veggies. We also had some cabbage for St. Patty's day so why not make a great healthy soup?!
Number of Servings: 9

Ingredients

    -2 C vegetable broth
    -1 3/4 C petite diced tomatoes
    -30 sprigs parsley
    -2 med. red potatoes, diced
    -4 med. carrots, chopped
    -2 med. onions or 1 1/2 large
    -8 C shredded cabbage
    -4 cloves garlic
    -salt and pepper to taste

Directions

---Add broth and all ingredients except cabbage to a large pot. Bring to a boil and then reduce to simmer, cover and cook for 30-40 min. or until veggies are tender. Add cabbage and stir well. Cook another 10-15 min. or until cabbage is desired tenderness.

---Season to taste with salt and pepper.

---Makes 9 servings of 1 C each.
