Bon Appetit Roasted Tomatillo Salsa

Introduction

This stuff is phenomenal. Really easy to make and worth the extra time vs. buying store-bought. The taste is excellent, and you can vary the heat depending on which type of hot pepper you choose. The serrano is a medium heat, you could also use jalepenos. If you want it hotter, leave some of the seeds. This stuff is phenomenal. Ingredients

    1poundtomatillos (about 6 large), papery husks removed, rinsed
    1/2large onion, cut into thirds
    2serrano chiles, halved, seeded
    1tablespoonolive oil
    1teaspoonsalt
    1cup(loosely packed) fresh cilantro leaves


Tips

*The size of the baking dish does not matter, as long as it fits your ingredients.

*I prefer to serve this room temp. or warmed, with warm tortilla chips, or with tacos or enchiladas.


Directions

Preheat oven to 375F. Toss first 5 ingredients in 8x8x2-inch glass baking dish. Roast in oven until tomatillos and onion are very soft, about 1 hour. Transfer contents of baking dish to processor and add cilantro. Puree until almost smooth. Transfer salsa to bowl. Chill or serve at room temperature.
