IntroductionOatmeal with Chia, Flax, cranberries, pecans and lots of cinnamon. Lots of fiber and antioxidants and GOOD! Oatmeal with Chia, Flax, cranberries, pecans and lots of cinnamon. Lots of fiber and antioxidants and GOOD!
In large microwave safe bowl, put:
1 c oats (I prefer old fashioned for the chewy texture)
1/4 c chia seeds
1/4 c Flax seed meal
1/4 c Cinnamon, ground (yes 1/4 cup)
1 c dried cranberries/cranraisins (packed)
1 c pecans (whole or pieces)
Stir together, then add:
2 c. milk (I used 2% - your choice)
1 c water
Microwave until thick, about 5 minutes. I like it chewy, Scoop out about 1/2 cup into your bowl, put the rest in a storage container in the fridge. Each morning, warm up a serving in the microwave, with a splash of milk.
My sister freezes it in individual containers with blueberries on top. She puts them in the fridge the night before to thaw.
