Lime in the Coconut Pudding

Introduction

I like this recipe because the serving size is bigger (more satisfying) than your standard 1/2 cup diet pudding but the calorie count is not a lot higher. Your dessert dishes will need to hold a cup of liquid. I like to use a footed glass dessert dish for this one. Ingredients

    1 package (9.1g serves 4) Kraft Jello No Sugar Added Lime Jelly Powder
    1 package (30g serves 4) Kraft Jello Fat Free Vanilla Pudding Mix (sugar free, dry)
    2 cups skim milk
    1/4 cup flaked coconut (sugar free)

Tips

Prep time does not include time for jello to set.


Directions

Prepare the lime jello as per package instructions and allow to set until firm.

Put lime jello in the bottom of each of the four dessert dishes using 1/2 of the jello.

Prepare vanilla pudding mix using the skim milk, stir in the coconut.

Put a layer of vanilla/coconut pudding on top of the lime jello using 1/2 the pudding mix.

Add a layer of lime jello to each dish and then top with the remaining pudding mix.

Refrigerate until set.
