Whole Wheat Chili Mac Skillet

Introduction

Ingredients

    16 oz. lean ground beef
    16 oz. frozen corn, thawed
    15 oz. can diced tomatoes
    15 oz. can dark red kidney beans, rinsed and drained
    4 oz. can diced green chili peppers (we prefer hot ones!)
    3/4 cup whole wheat elbow macaroni
    2 tsp. chili powder
    1 cup water
    1/2 cup shredded Mexican cheese

Directions

Brown and drain ground beef in a large skillet. Stir in remaining ingredients except cheese. Bring to a boil. Reduce heat and simmer, covered, 15 minutes until pasta is tender. Sprinkle with cheese. Cover and let stand 5 minutes.
