BACON AND EGG SUPRISE CUPS

Ingredients

    4 thick slices bacon
    4 eggs
    4 mushrooms, sliced
    1 tomato, halved
    4 T chopped bell peppers
    2 oz grated cheddar cheese

Directions

Partially cook the bacon in the microwave until it is limp.

Spray the inside of 2 ramekins with cooking spray. Make a cup out of 2 slices of bacon inside each cup, overlapping the sides of the ramekins. Place a half tomato in the bottom of each ramekin and layer with the mushrooms and peppers. Crack 2 eggs into each ramekin, trying not to break the yolks. Cover the whole top of each ramekin with cheese and bake for about 20 minutes at 375. When done, run a knife around the inside of the ramekin. You should be able to lift out the Surprise by grasping the rim of bacon and lifting.
