2 oz finely chopped mushrooms
2 oz finely chopped onion
2 oz finely chopped bacon
2 T butter
100 grams finely ground almonds
6 egg yolks
2 oz sharp cheddar
6 egg whites
Mix the almonds, egg yolks and cheddar. Add the cooled veggie/bacon mixture.
Whisk the egg whites and fold them into the mixture. Add plenty of pepper and salt if necessary.
Divide into 12 muffin cups and bake at 350 C until done.
