Gabby's Crockpot Mixed Bean Soup

Number of Servings: 4

Ingredients

    1 cup (dry) 15-bean soup mix (without seasoning)
    1 cup chopped celery
    1 cup chopped carrots
    1 medium tomato, chopped
    2 tbsp italian seasoning
    1/4 tsp salt
    3 cloves garlic, minced
    1 tsp oregano
    5 cups water

Tips

You could also omit the salt, and just add vegetable broth instead of water, but I didn't have any on-hand. I actually like the less salty taste of this soup with water (vs. with veggie broth).


Directions

Mix all ingredients in a crockpot and cook on low for 8-12 hours.

Serving Size: Makes about 4 1-cup servings
