Turkey Florentine

Ingredients

1 tbsp vegetable oil
1 garlic clove, minced
4 cups chopped, cooked spinach
Dash pepper
12 oz turkey cutlets
2 tsp light margarine
2 tsp enriched flour
1/2 cup skim milk
2 tsp white wine
2 tsp grated Parmesan cheese
Dash ground nutmeg

Directions
Combine oil and garlic in skillet and heat; add spinach and saute for 1-2 min. Stir in pepper and set aside.
Spray a nonstick skillet with nonstick cooking spray; cook turkey cutlets until browned on each side.
Melt margarine in small saucepan; stir in flour. Gradually stir in milk, wine, and cheese; continue to cook, stirring constantly with wire whisk, until thickened. Season with nutmeg.
Line a 1-quart casserole with cooked spinach mixture. Top with turkey and pour sauce evenly over cutlets. Bake at 350F for 20 min or until heated.
