Quintessential Quinoa

Ingredients

    1 tbsp olive oil
    4 onions chopped
    1 red pepper
    3 garlic cloves
    1/2 tsp sea salt
    2 cps quinoa
    4 cups water
    2 cups low-sodium chick stock

Directions

Saute onion, garlic and salt in olive oil. Add chpped red pepper and saute until onions are carmelized. Add water, stock and rinsed quinoa. Bring to a simmer. Stir once after 5 min, then simmer for another 35 mins or until water has been cooked in. Fluff with fork.
