Thai Coconut Chicken with Pineapple Salsa

Ingredients

    1 1/2 pounds boneless skinless chicken thighs (approx 5) cut into 1/2 inch strips
    1 Tbsp oil
    2 Tbsp minced garlic
    1 Tbsp minced fresh ginger
    2 tsp fish sauce
    1 cup shaken coconut milk (lite)
    1 1/2 cups chopped fresh pineapple
    1/3 cup chopped scallions
    1 chile ( thai or serrano)
    2 cups sticky rice

Directions

season chicken with salt and pepper. Heat oil in skillet over med-high heat. Cook chicken until golden brown in places. Add garlic and ginger, stir, and cook until fragrant. Add fish sauce, coconut milk, and 1/2 cup pineapple, bring to boil. Stir, reduce heat, and partially cover. Simmer until chicken is cooked through.

Stir together the rest of the pineapple, scallions, and chile in bowl. Serve with rice and chicken.
