Feta Mashed Potatoes

Introduction

This recipe is from the Weight Watchers 5 Star Cookbook. I changed a couple of the ingredients, and it is delicious. I love that the fat content is .6g total fat! Number of Servings: 8

Ingredients

    2 lb baking potatoes, peeled & cubed (about 5-1/4 cups)
    1/4 c fat-free milk
    3 T (3/4 oz) crumbled feta cheese
    2 T fat-free sour cream or nonfat plain yogurt
    1/2 t. salt
    1/2 t. dried oregano
    1/4 t. pepper

Directions

Put potatoes in large saucepan, and cover with water. Bring to a boil. Cover potatoes, reduce heat, and simmer 20 min or until potato is very tender.

Drain well, and put in mixer; beat at high speed until smooth. Add remaining ingredients, and beat well.

Serving Size: 8-1/2 cup servings
