Grated Carrot Salad with Greek Pineapple Yogurt

Ingredients

    4 carrots, peeled
    1 green apple
    20 walnuts, coarsely chopped
    2 tablespoons (30 mL) raisins
    1 single-serving 100 g container Oikos 2% Greek pineapple yogurt, stirred
    salt, to taste

Tips

topping the salad with the yogurt is much more attractive than mixing it all together


Directions

1.Grate the carrots

2.Cut apple into thin strips (with peel).

3.In a medium bowl, mix together the carrots, apple strips, chopped walnuts and raisins. Salt to taste.

4.Serve the salad topped with 1 tablespoon (15 ml) of Greek pineapple yogurt
