Ingredients

    2/3 cup Trader Joes Multigrain Baking & Pancake Mix
    1 cup, cooked brocoli, chopped (steamed, still with some crunch, bright green)
    1 cup Zucchini, shredded, raw
    1/2 cup shredded raw carrot
    2 servings Jarlsberg Light cheese, 2oz or 60 grams, total
    Black pepper
    1 Tbsp chopped parsley
    1/2 teaspoon liquid aminos or liquid coconut aminos
    1 ounce chopped walnuts
    1 large egg
    2 egg whites
    6 cloves garlic

Tips

Could I suggest serving with a sliced orange?


Directions

Preheat oven to 350 degrees.
Place all ingredients in a food processor and pulse until well blended. Spray muffin tins with cooking spray. Spoon evenly into 8 muffin cups or individual souffle cups.
Bake at 350 degrees for 25 -30 minutes.
