Ingredients

    4 large stalks of celery, diced
    half a celeriac, peeled and diced
    an onion, roughly chopped
    3 cloves of garlic, peeled
    a vegetable stock cube
    2 bay leaves

Tips

Lovely with low fat creme fraiche, a swirl of cream of some blue cheese crumbled in


Directions

Prepare the vegetables; chuck everything in a large pan and simmer gently for about 25 minutes until the vegetables are cooked. Pressure cooking takes about 10 minutes
