Turkey Bean and Vegetable Soup

Delicious and hearty way to use up your holiday turkey! Delicious and hearty way to use up your holiday turkey!
Number of Servings: 25

Ingredients

    1 lb. leftover turkey breast, chopped
    2 cups leftover green beans or 1 can green beans
    2 cups chopped carrots
    8 cups chopped fresh collard greens
    1 can yellow corn
    1 onion, chopped
    1 bell pepper, chopped
    3 medium potatoes, peeled and diced
    1 can red kidney beans
    1 can garbanzo beans
    1/2 cup pearled barley
    1-28 oz. can diced tomatoes
    2 large boxes Swanson 99% chicken broth

Directions

Combine all ingredients in a large stockpot, season to taste and simmer on low until raw ingredients are tender - approx. 1-1/2 hours or longer. Taste and reseason during simmering. I always like to add lots of spicy seasoning to give it a kick. Serving size - 1 cup

Serving Size: Makes approximately 25 one cup servings
