Shrimp, Sausage, and Veggie Soup

Introduction

I was looking for something to do with shrimp and ended up just winging it. After browsing several recipes I decided on these ingredients, and threw in a couple as I went. Number of Servings: 6

Ingredients

    1 lb. Shrimp, uncooked-medium, peeled and deveined
    7 oz. Smoked Sausage - sliced and quartered
    1/2 White Onion - chopped
    1/2 Green Bell Pepper - chopped
    1 16 oz. Can French Style Green Beans - drained
    1 16 oz. Can Chicken Broth - 99% fat free
    1 16 oz. Can Whole Peeled Tomatoes
    2 Cloves of Garlic - minced
    1 tbsp Leaf Oregano
    1 tsp Ground Thyme
    1/2 tsp Fresh Ground Black Pepper
    1/2 tbsp Salt
    1/2 tsp Lowry's Seasoned Salt
    1/2 tsp Cavendar's Greek Seasoning
    1 tsp Paprika
    1 tsp Ground Thyme
    1 tbsp Leaf Oregano
    2 cups Water

Tips

I usually make up a shaker with a 50/50 mix of Seasoned Salt and Greek Seasoning and just shake it onto the shrimp (it's great on chicken too). All the rest of the seasoning I just add without measuring.


Directions

1. Saute Sausage (about 5 minutes)
2. Remove sausage and set aside
3. Saute Bell Pepper, Onion, and Garlic (about 5 or 6 minutes)
4. Add Oregano, Paprika and Thyme to the pan with the bell pepper, onion and garlic. Saute a few more minutes to let the seasonings blend in
5. Shake Seasoning Salt and Greek Seasoning on the Shrimp
6. Cook Shrimp on a ribbed griddle or in a frying pan until they turn opaque
7. Dice up the Whole Peeled Tomatoes
8. Pour the liquid from the Whole Peeled Tomatoes into a pot
9. Pour Chicken Broth and 2 cups of Water into the pot
10. Empty the can of Green Beans into the pot
11. Add all the rest of the ingredients to the pot and boil for about 10 minutes (including Sausage and Shrimp)
