Atkins Pancakes

Ingredients

    Splenda Packet (1 serving = 1 packet), 1 serving
    Baking Powder, 2 tsp
    Salt, .25 tsp
    Half and Half Cream, 1 cup
    Egg, fresh, 1 large
    Atkins all purpose bake mix, 1 cup

Directions

Blend all dry ingredients together in a large bowl. Add half and hals and egg. Whisk batter. Let the mixture sit for at least 5 minutes to activate the baking powder. Coat pan with non-stick vegetable oil spray. Cook the pancakes on the pan using medium heat. Flip the pancakes when bubbles appear on top and edges start to cook. makes about 6, 6 inch pancakes.
