Saute Potatos, Celery, Onions, Green Peppers,Carrots and Squash in olive oil. Add Chopped whole tomatoes, black beans, tomato sauce, water, vegetable broth, salt and pepper to taste, cumin and bring to a boil. Add Rice and Quinoa and simmer until rice is soft.
