Cinnamon Butterscotch Coffee Cake

Introduction

Ingredients

    Batter:
    1/2 cup oil
    1 1/2 cup sugar
    2 eggs
    1 1/2 cup milk
    4 tsp vanilla (see tips)
    1 1/2 tsp baking powder

    Topping:
    1 cup brown sugar
    4 tbls butter
    4 tbls flour
    2 tbls ground cinnamon
    1 16 oz bag butterscotch chips

Tips

I use Mexican white vanilla, therefore I use 1/2 of what the receipe calls for.
Also you can leave out the butterscotch chips or use another flavor.


Directions

Batter:
Mix together the oil, sugar, vanilla and eggs until creamy.
Combine 3 cups flour with the baking powder and slowly mix into the batter alternating with the milk.

Topping:
Mix brown sugar, cold cubed butter, 4 Tblsp of flour, and cinnamon.
Pour batter into a 9 x 13 pan that has been treated with Pam or butter and flour to prevent sticking. Next sprinkle the topping and 1 bag of butterscotch chips over the batter and swirl.
Bake at 350 for 40-45 minutes. Cool and enjoy.

Serving Size: Makes 18 2x3x2high servings.
