Kari's Own Low Carb Cottage Cheese Mini Cheesecakes

Introduction

I decided to try and get a lower carb product than just cream cheese would allow. It worked. I decided to try and get a lower carb product than just cream cheese would allow. It worked.
Number of Servings: 20

Ingredients

    1 8oz brick cream cheese
    8 oz (1 cup) Cottage cheese, pureed smooth
    3 eggs
    Vanilla to taste
    Sweeteners of choice to taste

Tips

I use liquid sweetener to avoid extra carbs.

These are great spread with homemade walnut butter or sugar free jam!


Directions

Puree cottage cheese until smooth. Add softened cream cheese, eggs, vanilla, and sweeteners. Mix until creamy.

Pour into 20 muffin cups lined with paper, and bake for 20 minutes.

Serving Size: makes 20 mini muffins
