Chicken Sausage, Fruit and Rice Skillet Dinner

Introduction

This is a modification of a recipe on the Al Fresco website. I omit the oil, the wine, and the cilantro from the original recipe, and I use more fruit.

I apologize but I'm not sure about the salsa. I use the whole jar, and I don't know how many servings were in the jar. I put down 20 servings, but it may have been less...which would change the calories and the sodium.

Ingredients

    1 package (4 links) Al Fresco Chipotle Chorizo Chicken Sausage
    10 oz fresh pineapple
    1 pound fresh mango (peeled)
    1 jar Newman's Own Mango Salsa
    1 can Goya Black Beans, drained and rinsed
    2 servings of frozen shelled edamame, cooked as directed in microwave
    1 cup of dry brown rice, cooked according to package directions

Directions

Cook the brown rice according to the package directions (approximately 35 min of boiling time).
While the rice is cooking, cut the pineapple and mango into bite-sized pieces. Peel the casing off the sausages, quarter them lengthwise, and cut them into bite-sized pieces as well. Put the fruit and sausage in a covered skillet on medium heat, and cook, stirring occasionally, until the fruit is carmelized and browning nicely on all sides. Add the edamame, the black beans, and the salsa, and heat through. When the rice is cooked, either add it to the pot and mix it all together - or serve 1/2 cup of rice with 1/2 cup of the fruit/sausage/beans mixture on top.
