Biggest Loser Chicken

Ingredients

    Frozen boneless skinless chicken breast
    1/3 bag frozen veggies (prefer asparagus stirfry from walmart!!)
    1 pre-packaged cup minute rice, long grain wild rice
    Ziploc steamer bags, medium

Directions

Buy the bag of boneless skinless chicken breast and put 1 in each steamer bag. Put 1/3 bag of veggies in each steamer bag. Add desired dry spices. Cook in microwave from frozen for 7-10 minutes depending on power of microwave. Let stand while rice is cooking in microwave for 1 minute. Bags can be made ahead of time and put back into freeze. I make enough bags on Sunday night to use all my chicken. Usually about 6 chicken breasts in a bag.

  • Quick and easy. I will experiment with the spices. I used Greek seasoning and it was wonderful! This would make a great meal to take to work if you have a microwave and fridge. - 4/12/08

    This isn't actually a biggest loser recipe, I got the idea for the chicken in the steamer bags from the show, the rest I found through trial and error. How awesome is it though!! I haven't had the same kind of chicken in months!!
