Curried chicken and cabbage

Ingredients

    Chicken thighs, skinless, boneless
    cabbage
    ginger
    garlic
    pepper flakes
    oil
    cilantro
    lime

Directions

Saute 1 pound chicken thighs (in chunks), 1 tbls each minced garlic, ginger, and chili in neutral oil until browned. Add chopped green cabbage leaves (1 small cabbage), curry powder (at least 1 tbls). Cover and cook until cabbage wilts, then add a 15 oz can of coconut milk. Simmer, partly covered, until cabbage is tender and sauce thickens. Garnish: cilantro, lime.
