Sweet Potato-Kale Stew

Ingredients

    Red Onion, 1 serving, chopped
    Garlic, 3 clove, chopped
    Lentils, 1/2 cup
    Brown rice 1/2 cup
    Allspice, 2 tsp
    Sweet potato, in skin, 2 large,cut in cubes
    Delmonte 14.5 oz Salt-free Stewed Tomatoes, 1 serving
    Kale, 1 cup, chopped
    Vegetable Broth, salt-free, 1/2 cup
    Shelled Edamame, 1 cup
    Black Pepper and Sea Salt, to taste


Directions

Place all ingredients, except kale, int a large, covered deep pot and cook on medium heat for 30 minutes, stirring occasionaly. Remove from heat and mix in kale. Let sit covered for approximately 15 minutes. Stir once more and serve.
