Nik's Four Cheese Mashed Cauliflower

Ingredients

    1 large head cauliflower (or two bags frozen)
    2-4 oz three different kinds of cheese (cheddar, montery jack, swiss, mozzarella, asiago)
    1 egg beaten
    6 oz plain low/0 fat greek yogurt
    2 tbsp light butter spread (melted)
    1/4 c whole wheat bread crumbs
    1/2 c grated parmesan cheese
    dashes of onion & garlic powder, sald and pepper and paprika

Tips

I use crushed pork rinds in place of bread crumbs


Directions

1. Boil cauliflower florets until tender, drain and mash
2. Mix cheeses, yogurt and whatever spices you like, except the paprika. Stir thoroughly then mix in the egg.
3. Transfer mixture over to a 13x9 casserole dish.
4. In a small bowl, combine bread crumbs, paremesan cheese and butter spread.
5. Spread evenly over cauliflower mixture and top with a dash or two of paprika.
6. Bake at 350 for about 20 minutes or tuntil top is nicely browned.
