Whole Wheat Lactation Cookies with Dark Chocolate and Raisins

Introduction

Ingredients

    2 eggs
    1 tsp vanilla
    3/4 cup raisins or dried cherries

    1 1/4 cup packed brown sugar
    3/4 cup white sugar
    1 cup butter

    2 tbsp flax seed meal
    3 tbsp water

    3 cups oats
    2 cups whole wheat baking flour
    1 tsp baking soda
    1 tsp salt
    2-4 tbsp brewer's yeast or nutritional yeast
    1 cup chocolate chips (semi-sweet or dark, preferably)

Tips

Refrigerating the dough before cooking keeps the cookies from spreading as much and keeps them softer. Cookies or dough balls can be frozen for later. If you freeze the dough balls, thaw them in the fridge before baking.


Directions

Mix 2 eggs, 1tsp vanilla in a bowl. Add 3/4 cup raisins and set aside to soak for an hour so the raisins get plump.

Mix 3 tbsp water and 2 tbsp flax meal in a separate bowl to soak for at least 5 minutes.

In a large bowl, mix 1 1/4 cup packed brown sugar, 3/4 cup white sugar, and 1 cup of softened butter.

In a large bowl, mix 3 cups of oats (I use rolled oats but quick would work, too), 2 cups of white flour or whole wheat baking flour, 1 tsp baking soda, 1 tsp salt, 4 tbsp brewer's yeast, and chocolate chips.

Add all wet ingredients to all dry ingredients.

Shape into 1-inch balls and place on a cookie sheet. For best results, refrigerate dough balls for approx an hour, then bake at 365 until slightly brown (about 8-10 minutes)

Serving Size: Makes about 5 dozen (60) cookies
