Fresh Salmon Cakes

Ingredients

    6 oz salmon
    1 egg, beaten
    4 drops hot pepper sauce
    1 green onion, sliced
    2 teaspoons lemon juice
    2 teaspoons low sodium soy sauce
    6 tablespoons whole wheat panko breadcrumbs
    1 teaspoons olive oil

Tips

Serve with Corn and Cabbage Slaw with Lemon and Honey Dressing


Directions

Preheat oven to 350 degrees. Bake salmon 15
minutes or until done; cool. Flake salmon into a
large bowl. Combine egg, pepper sauce, green
onion, lemon juice, soy sauce and breadcrumbs
in a medium bowl. Add salmon and stir to
combine. Shape mixture into palm sized patties.
Heat olive oil in a large skillet over medium
heat. Cook salmon cakes until golden brown,
about 6 minutes per side.
