Lamb Meatballs

Ingredients

    3 tablespoons dry whole wheat couscous
    small onion,finely minced
    2 tablespoons finely chopped dried apricots
    lb lean ground lamb
    teaspoon allspice
    1 tablespoon olive oil

Tips

Serve with Greek Salad with Feta


Directions

Place couscous in a small bowl, and add 3
tablespoons boiling-hot water. Cover the bowl
tightly with plastic wrap, and let stand 5
minutes. In a large bowl, combine onion,
apricots lamb and allspice. After 5 minutes, fluff
couscous with a fork and mix into lamb mixture.
Form mixture into 1 inch meatballs. Heat oil in
large skillet over medium heat. Cook meatballs
10 minutes, turning occasionally, until golden
brown on all sides.
