Ingredients

    medium red onion, sliced into rings
    1 green bell pepper, seeded and cut across into
    rings
    2 plum tomatoes, chopped
    cup Kalamata olives
    2 tablespoons olive oil
    2 teaspoons lemon juice
    1 small clove garlic,minced
    2 oz crumbled feta cheese

Tips

Serve with Lamb Meatballs


Directions

Arrange red onion and bell pepper rings on 2
plates. Scatter tomato and olives evenly over
the top. In a small bowl, whisk together olive oil,
lemon juice and garlic. Drizzle salads with
dressing. Sprinkle with feta cheese, and season
to taste with salt and pepper.
