Rev'd UP Scalloped Potatoes

Introduction

I was making the potatoes and cooking some kale when I decided to combine the two... this came out really good! I was making the potatoes and cooking some kale when I decided to combine the two... this came out really good!
Number of Servings: 4

Ingredients

    *Betty Crocker Scalloped Potatoes low fat, 4 serving
    Kale, 4 cup, chopped - I use Tuscan Kale - other names for this are Black Kale or Dinosaur Kale.
    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Chicken stock, home-prepared, 0.25 cup

Directions

make the scalloped potatoes according to package directions and bake.
In a LARGE skillet, saute onion in chicken stock until translucent, and chop up the kale, if using regular kale, remove leaves from the stems and chop the leaves only. Add to the pan, and stir frequently to cook the leaves.
When there is about 5 minutes left to baking time on the potatoes, remove from oven, add to the pan mix together well and serve with chicken or fish or red meat of choice.

Serving Size: makes 4 good sized servings
