Lebanese Lentil Soup (Super healthy version!)

Introduction

Number of Servings: 6

Ingredients

    6 cups low sodium vegetable broth
    1lb red lentils (easy to find at Trader Joe's)
    2 cloves garlic, minced
    1 yellow onion, chopped
    2 carrots, diced
    1 1/2 teaspoons cumin
    1/2 teaspoon cayenne
    2/3 cup lemon juice (or to taste)
    salt to taste

Directions

Boil veg stock and lentils, then reduce to med-low heat. Simmer 20 min. In nonstick saute pan, saute garlic, carrots, and onion in a few tablespoons of water until soft. Add spices, then cook a minute more. Add mix to lentils and simmer 10 min. Puree soup in blender, then return to pot and add lemon juice. Serve.

I prefer a little bite to my lentils, so only puree the vegetable mix before adding to the lentils. You could also just puree some of the lentils, not all. Delicious with a little chili sauce on top. Serve with bread.

Serving Size: Makes about 6-8 cups.
