Pumpkin Chocolate Chip Muffins

Introduction

Ingredients

    2 1/2 cups all-purpose flour
    1 TBS baking powder
    1 1/2 tsp pumpkin pie spice
    1/2 tsp salt
    1 cup solid-pack pumpkin
    1/3 cup packed light brown sugar
    1/2 cup brown sugar blend (Splenda)
    1/4 cup Smart Balance Fat Free Milk
    6 TBS No Calorie Spray Butter
    1 egg
    1/4 cup egg beater
    1 cup semisweet chocolate chips
    1/2 cup chopped walnuts


Directions

1. Preheat oven to 400 F. Line 18 standard muffin cups with paper baking cups or spray with nonstick cooking spray

2. Combine flour, baking powder, pumpkin pie spice and salt in large bowl. Beat pumpkin, brown sugars, milk, butter and eggs in medium bowl until well blended. Add pumpkin mixture, chocolate chips and walnuts to flour mixture; stir just until moistened. Spoon evenly into prepared muffin cups, filling two-thirds full.

3. Bake 15 to 17 minutes or until toothpick inserted into center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans to rack; cool completely. Makes 18 mufins.
