Lazy Enchilada Bake

Number of Servings: 6

Ingredients

    1 pound boneless skinless chicken breast (cut into 1 inch chunks)
    salt and pepper to taste
    1 cup red enchilada sauce
    1 cup light sour cream
    3/4 cup salsa
    4 oz green chilies
    1 cup frozen corn (thawed)
    12 corn tortillas (torn into bite sized pieces)
    1 cup shredded 2% Mexican blend cheese

Directions

1. Preheat the oven to 350 degrees.
2. Saute 1 pound of cut of chicken breast seasoned with salt and pepper. While that is cooking mix the enchilada sauce, sour cream and salsa in a big bowl.
3. Once the chicken is done and has cooled a little mix into the sauce mixture along with the green chilies and corn. The final item to mix in is the torn up corn tortillas.
4. Once everything is mixed together scoop into a 9x13 pre-greased pan and sprinkle with cheese.
5. Bake for 25 minutes until the cheese is all melted.
