Irish Brown Bread

Introduction

A wonderful bread often served in Irish pubs. Great with soups and stews. A wonderful bread often served in Irish pubs. Great with soups and stews.
Number of Servings: 16

Ingredients

    1 1/4 Cups unbleached flour
    1 Cup whole wheat flour
    1/2 Cup rolled oats
    1/4 Cup toasted wheat germ
    1 1/2 Tsp baking soda
    3/4 tsp salt
    4 Tbsp cold unsalted butter
    1 1/3 Cups plain yogurt (or buttermilk)

Tips

I knead my dough on a silicon mat. It makes clean up much easier. No more scraping dough off the counter!


Directions


1) Preheat the oven to 425.
2) In a large bowl, mix together the flours, oats, wheat germ, baking soda and salt.
3) Cut the butter into pieces then work evenly into the flour mixture with with a pastry blender, two knives or your fingers.
4) Stir in the yogurt until blended. Turn the mixture out on a lightly floured surface. Knead for about minute, adding more flour as needed to keep it from sticking. (I use the whole wheat flour for this.)
5) Roll the dough into a ball and flatten into a 7 inch disc. Cut a shallow X on top. Bake for 30 minutes.

Allow 2 hours to cool on a wire rack.

Serving Size: Makes 16 hearty slices
