Lighter Pasta Alfredo

Introduction

Number of Servings: 6

Ingredients

    1 OZ. (or more) Dry packed Sun Dried Tomatoes
    2 cups cubed steamed butternut squash
    1 cup frozen petite peas
    3 TBLS chopped parsley (optional)
    1 15 oz jar Bertoli Light Alfredo Sauce
    1 16 oz pkg dried linquine or fettuccine

Tips

I will typically use a fresh butternut squash that I have cubed and packaged and frozen. Easy to grow! But in season, store bought is good too. You could use store-bought frozen butternut squash as well.


Directions

Steam squash, put all ingredients in a 2 quart saucepan and simmer while cooking pasta according to directions
Serve sauce over pasta.

Serving Size: Makes 6-8 servings 1 cup servings
