Introduction

Number of Servings: 50

Ingredients

    3 large beaten eggs
    1 Cup Vegetable Oil
    2 Cups Sugar (1 C white 1 c brown)
    2 Cups finely chopped or shredded Broccoli or peeled zucchini
    3 Tbsp Vanilla
    3 Cups Flour
    1 tsp Baking Powder
    1/2 tsp Salt
    1 Tbsp Cinnamon

Tips

1/2 Cup raisins or nuts may also be added.


Directions

Blend beaten eggs, oil, sugar, zuccini, & vanilla. Blend in dry ingredients. Put batter in 2 greased and floured loaf pans. Bale at 325 degrees for 45 minutes to 1 hour. When cool enough to slice, make 25 slices per loaf approx 1/2 inch thick.
