Toasted Pecan Butter

Introduction

A great raw alternative to processed peanut butter and a cinch to make. A great raw alternative to processed peanut butter and a cinch to make.
Number of Servings: 10

Ingredients

    2 cups raw pecans
    3 tablespoons water
    1 tsp grapeseed oil (or other flavorless oil, grape tends to be healthier)

Tips

* Yes, this will be grittier and will not adhere the way manufactured peanut butter does (that's because there are no preservatives or chemicals to change the consistency)

* Needs to be refrigerated to prevent spoiling.


Directions

Preheat oven to 350

Toss raw pecans with the grapeseed oil and spread in a single layer on an ungreased cookie sheet. Toast in the oven, about 10-12 minutes. Remove and cool (about 30 minutes).

Toss pecans in a food processor or Vitamix (I LOOOOOOOOOVE my Cuisinart mini-prep, and I'm saving for a Vitamix!) and grind on high for 30 seconds. Scrape down sides with a spatula and add 1 tablespoon of water. Continue blending and adding water, 30 seconds and 1 tablespoon at a time, until you get desired consistency. If desired, an extra teaspoon of oil can be added to the blend to make it creamier. Me, I love it au natural!
