Number of Servings: 12

Ingredients

    One cup shredded zucchini
    1/4 cup shredded cheddar cheese
    1/4 cup bread crumbs
    1/4 cup Egg BeatersBeaters
    1/4 of an onion, chopped
    Salt
    Pepper

Tips

Be careful with the salt and pepper. A little goes a long way with zucchini. You can use seasoned breadcrumbs if you prefer.


Directions

Preheat oven to 400 degrees F. Shred the zucchini. Squeeze out excess water using a dish towel, or paper towels. Mix all ingredients in a large bowl. Spoon mixture into a mini muffin tin, sprayed with cooking spray. Press down on the tops of each to help them stay together when you remove them from the pan. Bake 15 to 20 minutes, or until golden brown. Use a plastic knife around the edges od each tot to help loosen them. Enjoy!!!!

Serving Size: Makes 12 Tots, 3 tots per serving.
