Fried Rice

Number of Servings: 20

Ingredients

    4 or 5 chicken tenders sliced thin
    1 cup sliced or chopped carrots
    2 cup sliced asparagus
    1 cup frozen peas
    1 cup sliced scallions
    diced ginger (about 4 or 5 tsp)
    diced garlic (about 4 or 5 tsp)
    3 eggs, beaten
    3 tblsp oil
    1/4 cup soy sauce
    5 cup cooked white rice

Directions

Chop all veggies, ginger and garlic. Scramble eggs. Cut up chicken. Heat pan to med. heat. Add oil, chicken, ginger and garlic. Stir until chicken is done. Place chicken on plate and scramble eggs in pan. Place egg on plate with chicken. Saute veggies in hot pan adding more oil if needed. Stir for a couple of minutes or until veggies are as cooked as you like. Add rice, chicken, soy sauce and egg to veggies. Stir until mixed well and everything is heated through.
