Mock Chicken Noodle Soup

Ingredients

    1 Tablespoon of extra-virgin olive oil
    1/4 cup of vegetable broth
    3 medium stalks of celery, thinly sliced
    3 medium carrots, peeled and thinly sliced
    1 small onion, minced
    3 cloves of garlic, minced
    6 cups of water
    2 vegetable bouillon cubes
    1 tsp of Nature's Seasoning
    1/2 tsp of dried dill weed
    2 3.1oz packets of soba noodles
    8 oz of extra firm tofu, finely diced
    salt and pepper to taste

Tips

You may have to add more water and seasoning if you plan to do leftovers.


Directions

Heat the broth in a large soup pot over medium-high heat. Add celery, carrots, onion, and garlic. Cook until onion is transparent, about 5 minutes.

Add water with bouillon cubes, seasoning, and dried dill. Bring to a rapid simmer. Lower the heat, cover, and simmer for 15 minutes, or until vegetables are tender.

Raise the heat back to medium-high. Add the noodles and cook for package time, about 5 minutes.

Stir in the diced tofu, then season with salt and pepper. Serve at once.
