Enchilada Hamburger Casserole




Number of Servings: 8

Ingredients

    9 corn tortillas
    12 oz ground beef
    1 can black beans, drained and rinsed
    1 C corn
    3 C enchilada sauce
    1 C reduced fat cheese
    1 C onions, chopped
    12 black olives, halved and sliced
    1/2 t red pepper flakes

Directions

Preheat oven to 350.
Cook hamburger and onions together. Drain and rinse.
Mix red pepper flakes with enchilada sauce.
Spray 9 x 13 pan with pam.
Dip tortillas in enchilada sauce and cover bottom of pan (3 tortillas cut to cover).
Add layer of 1/2 of hamburger, beans, corn, black olives and 1/3 c of cheese.
Repeat layers.
Place last of the tortillas dipped in sauce on the top. Pour remaining enchilada sauce over all. Top with last of the cheese.
Bake 30-45 minutes
